It's the Dressing: Ginger Salad

If you have been to a Japanese restaurant and ordered the authentic ginger salad and LOVE the dressing this is a recipe for you!  Its actually very healthy, easy and a delicious side for any Asian meal.  I pair it with Veggie Gyoza and Roasted Asparagus (those recipes to come later).

Ingredients

Dressing:

  • 1 carrot chopped
  • 1/4 cup of olive oil
  • 1 1/2 tablespoons low sodium soy sauce
  • 1/2 lemon
  • 1 minced garlic clove
  • 1 tablespoon grated fresh ginger root
  • 1 tablespoon mustard
  • 1 tablespoon honey

Salad: 

  • Iceberg lettuce
  • tomato slices 
  • cucumber slices
  • shredded carrot

Directions

Blend all ingredients in blender of food processor until thoroughly blended.  I like this dressing the traditional way and on the thick side.  Then top over Salad.  Its that easy!  ENJOY!
