Light Broccoli & Chicken Pasta

Pasta, Pasta, Pasta, I love it!  Luckily I also love broccoli and greens and all that healthy stuff too.  Which is great so I can set an example for Arabella and show her that veggies really are not that bad!  So far all food with her has been a success with the exception of her slowly warming up to peas.  I've come up with a family friendly light broccoli & chicken pasta that our whole family loved.  This is about 1/3 the calories of most white pasta dishes (ie: my favorite fettuccine alfredo).   

Ingredients

  • 1.5 lbs chicken
  • 1 cup broccoli florets 
  • 3/4 box of angel hair pasta
  • 3/4 cup olive oil (plus some for cooking chicken)
  • 3/4 cup chicken broth
  • 1/2 cup cooking wine
  • 1 TBS minced onion
  • 1 minced garlic clove
  • 1/4 cup parmesan 
  • Shaved parmesan for topping 
  • 10 julienne basil leaves 
  • pepper for taste

Directions

Boil water and cook pasta according to package, meanwhile grill or pan cook chicken, season with your favorite chicken seasoning (ie; poultry blend (see pic of my fav), oregano, italian etc), olive oil, and pepper.   Cube and set aside until you are ready to add to pasta.  Drain pasta and leave in strainer when finished.   Turn pot down to medium and add half the olive oil, garlic and onion stirring about 3-5 min.  To the same pot  add in the broccoli, chicken broth, and wine and turn up to med/high, continue to stir and cook for an additional 2 minutes.  Add the drained pasta and chicken back to the pot stirring and mixing for 5 more minutes.   Lastly add the cheese and the remainder of the olive oil, stir in and cook about 2 min till cheese melts.  Top with shaved parmesan, pepper and basil when serving.  

Spinach is in season so I doubled the chicken for tomorrows antioxidant spinach dinner salad!  Makes life much easier to get two different meals out of one stove session!  To see what else is in season around you check out this link.  Its great to incorporate these things into your meals since they are at peak taste!
